Chickpea Cookies

Ingredients:

  • 1 can of organic chickpeas, rinsed and drained

  • 1/3 cup of peanut butter

  • 1/3 cup maple syrup

  • 1.5 tsp baking soda

  • 3 Tbsp of flaxseed meal

  • 1.5 tsp vanilla extract

  • Chocolate chips

Method:
1. Add all ingredients except for chocolate chips into a food processor. Mix on high until well combined.

2. Fold in chocolate chips.

3. Spoon onto baking sheet. Bake at 350F for about 20 minutes or until golden!

*I leave the cookies on the baking sheet for about 10 minutes after they’ve been removed from the oven to cook a little longer
