Chickpea Date Chocolate Chip Bars

Loaded with fiber, omega-3s, and some protein, these bars are a great blood-sugar-balancing afternoon snack! They’re made with all whole foods and sweetened with dates. Best of all, they have a fudge-y consistency and would pair so well with a hot cup of tea ☕️

Ingredients:

  • 1 can of rinsed and drained organic chickpeas

  • 10 Medjool Dates

  • 1/4 cup walnuts

  • 3 Tbsp Coconut oil, melted 

  • 1.5 tsp vanilla

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1/2 cup dark chocolate chips 

  • Avocado oil spray or butter

Method:

  1. Preheat oven to 350F

  2. Grease an 8x8 inch pan with avocado oil spray or butter

  3. Rinse and drain chickpeas. Pat dry with a paper towel.

  4. Mix all ingredients into a food processor until it forms a paste.

  5. Spread mixture into the pan and top with more chocolate chips

  6. Top with more chocolate chips!

  7. Bake for ~30 mins or until edges are cooked. The natural texture is fudge-y because of the dates and chickpeas. They taste best if you let them cool in the pan and refrigerate for 1-2 hours to allow coconut oil to harden (or refrigerate until it’s hard and doesn’t crumble)!

This would also be great with pumpkin seeds, sliced almonds, blueberries, or dried cranberries :)
