Corn and Black Bean Salsa

For those of you that struggle to include veggies in your diet, this salsa is for you. It is literally the most versatile thing you could make and also packs a ton of micronutrients, carbs, and healthy fats! 

I add it on top of salads, eggs, taco bowls, wraps, or just snack on it with chips! It’s also so great to bring to gatherings because it makes so much. 

Ingredients:

⁃ 1 small red onion, finely chopped 

⁃ 1 pack of cherry tomatoes, quartered

⁃ 2 bell peppers, finely chopped

⁃ 1 can no salt added corn, drained and rinsed

⁃ 1 can organic black beans, drained and rinsed 

⁃ 1 handful of cilantro, finely chopped 

⁃ 2 avocados, chopped into cubes

⁃ 2 fresh jalapeños, minced (optional) 

Dressing:

⁃ Juice of 3 limes

⁃ 3 Tbsp olive oil

⁃ 1/4 cup apple cider vinegar

⁃ 1 tsp salt

⁃ 1/2 tsp pepper

Chop everything and add to a large bowl. Add dressing. Best if served chilled :)
